Egg in a Nest

Ingredients

  • 1 Slice of Bread
  • Grated Cheese
  • 1 Egg
  1. Using an egg ring make a circular hole in the middle of the slice of bread
  2. Place the slice of bread and the circle on a hot frying pan with a small teaspoon of melted butter.
  3. When one side of the bread is slightly toasted flip it over along with the circle
  4. Break an egg into the hole
  5. When it is cooked to your preference flip the slice of bread and egg over sprinkle the slice of bread with the egg in the centre with the grated cheese
  6. Place the toasted circle lid on top of the grated cheese like a hat
  7. Once the egg is cooked place on plate to cool

My kids love to cook this because they can do it all by themselves with a bit of adult supervision!

 

Tuna Rice Patties

Ingredients

  • 1 Cup Cooked Rice
  • 1 Large tin (440g) of Tuna (drained)
  • 1 Onion diced
  • 1/2 Cup Milk
  • 3 Tablespoons Self Raising Flour
  • 1 Tablespoon Parsley
  • 1 teaspoon sugar
  • 1 teaspoon of Vinegar
  • 1 teaspoon of Salt and Pepper
  • 2 Eggs seperated
  1. Mix all ingredients together with egg yolks
  2. Whip egg whites in a seperate bowl until stiff and add to mixture just before cooking
  3. Cover fry pan with a thin coating of oil and spoon in desert spoons of mix
  4. Brown on each side then remove from pan.
  5. Patties can be made earlier and stored in fridge.
  6. Reheat in a warm oven prior to serving

 

Meatballs

Ingredients

  • 1 Kg of Ground Mince
  • Tomato Sauce
  • Worchesteshire Sauce
  • 1 Large Onion
  • 1 Clove Garlic
  • Plain Flour
  • 1 Egg
  • 2 Tablespoons Dried Bread Crumbs
  • Liquid Beef Stock
  1. Finely chop onion and combine with raw ground mince
  2. Mix together with fingers (use rubber disposable gloves if you prefer)
  3. Add a squeeze of tomato sauce and a slurp of worchesteshire sauce
  4. Add crushed garlic clove, egg and bread crumbs
  5. Combine with hands again until it maintains a good consistency to hold together
  6. When combined roll into small balls and roll in plain flour.
  7. Cook over medium heat in a large frying pan using the beef stock instead of oil to cook in.
  8. As liquid is absorbed add small amounts of beef stock to the pan to prevent sticking. Turning meatballs a few times during cooking.

 

Homemade Pizza

Ingredients

  • Lebanese Bread
  • Spaghetti Sauce
  • Shaved Ham
  • Feta Cheese crumbled
  • Fresh Herbs
  • Grated Cheese
  1. Spread lebanese bread with spaghetti sauce
  2. Add Shaved ham or any meat that you like eg. pepperoni, bacon
  3. Sprinkle with Feta cheese (greek feta is the best for crumbling)
  4. Add some fresh chopped herbs eg. basil, rosemary and parsley
  5. Sprinkle with grated cheese
  6. Place on a cooking tray in a moderate oven for 5-10mins

 

Pumpkin Soup

Ingredients

  • 500gms Butternut Pumpkin
  • 1 Onion
  • 2 Tablespoons Butter/Margarine
  • 2 Tablespoons Chicken Stock Powder
  • 2 Cups Water
  • 1/4 Cup Cream
  1. Brown Onion in Butter/margarine in large saucepan
  2. Add cubed pumpkin and fry for 10-15mins
  3. Combine Stock powder and water, bring to boil
  4. Simmer until pumpkin is soft
  5. Allow to cool then blend until smooth with a hand held blender
  6. Place back on heat and add cream
  7. Serve with crusty bread
