Chocolate Chip Cookies

Chocolate Chip Cookies

Ingredients                                                                                                              

  • 125g (4oz) Butter or Margarine 1/2 Cup Castor Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Teaspoon Vanilla/Vanilla Essense
  • 1 Egg
  • 1 3/4 Cups Self Raising Flour
  • 125g (4oz) Chocolate Chips   (our kids also love using mini M&M's in place of chocolate chips)
  • Pinch Salt
  1. Cream together Butter, Castor Sugar, Brown Sugar and Vanilla. 
  2. Add lightly Beaten egg gradually
  3. Mix in Sifted Flour and Salt
  4. Add Chocolate Chips and mix well
  5. Shape into teaspoons of mixture into small balls
  6. Place on greased oven trays, allow room for spreading
  7. Bake in moderate oven 10 to 12 mins

 

Honey Oat Bars

Ingredients

  • 1 Cup Rolled Oats
  • 1 Cup Sultanas
  • 1/2 Wholemeal Self Raising Flour
  • 1/2 Cup Raw Sugar
  • 1/2 Cup Coconut
  • 155g (5oz) Butter/Margarine
  • 1 Tablespoon Honey

 

  1. Combine Rolled Oats, Sultanas, Sifted Flour, Sugar and Coconut into a bowl
  2. Melt Butter/Margarine and mix with honey in seperate bowl
  3. Mix honey and butter into dry mixture
  4. Press mixture evenly over base of well geased lamington tin (28cm x 18cm approx)
  5. Bake in moderate oven 15 to 20 mins until golden in colour
  6. Cut into bars while hot and remove from tin when cold

Ingredients

  • 1 Cup Plain Flour
  • 2/3 Cup Castor Sugar
  • 1 Cup Rolled Oats
  • 1 Cup Desiccated Coconut
  • 100g Butter/Margarine
  • 1/4 Cup Golden Syrup
  • 1/2 teaspoon Bicarbonate of Soda
  • 1 Tablespoon Hot Water

 

  1. Sift Flour, Sugar into a large bowl
  2. Add Coconut and Rolled Oats and mix well making a well in the middle
  3. Combine Butter and Golden Syrup into a saucepan
  4. Stir over low heat until buttter has melted, remove from heat
  5. Dissolve Soda in Hot water and add immedietly to saucepan with Butter and honey
  6. Stir until Foamy
  7. Add to dry ingredients and stir until well combined
  8. Line a Lamington Tin (28cm x 18cm approx) with Aluminium Foil
  9. Press mixture into prepared tin and smooth surface with back of a spoon
  10. Bake in moderate oven 20-25mins or until golden brown
  11. Cool in tin, using the foil lift out and cut into squares

 

Chocolate Brownies

Ingredients

  • 150g (5oz) Butter/Margarine
  • 125g Dark Chocolate
  • 3 Eggs
  • 1 1/2 Cups Castor Sugar
  • 1 teaspoon Vanilla Essense
  • 1 Cup Plain Flour
  • 1/4 Cocoa Powder
  • Icing Sugar to dust
  1. Prepare a 20cm square cake tin with oil or melted butter
  2. Line base of tin with baking paper extending over 2 sides
  3. Melt Chocolate and butter in a heatproof bowl, once melted leave to cool, don't over heat
  4. Beat Eggs, sugar and vanilla in a large bowl with a wire whisk
  5. whisk well and add chocolate mixture
  6. Stir in flour and cocoa, do not over beat
  7. Pour into the prepared tin
  8. Bake for 40 mins in a moderate oven, until slightly risen in centre and firm when touched
  9. Leave to cool in tin then lift out to cut into squares
  10. Dust with sifted icing sugar

 

Rock Cakes

Ingredients

  • 2 Cups Self Raising Flour
  • 3 oz Butter/Margarine
  • 1/2 Cup Castor Sugar
  • 1/2 teaspoon mixed spice
  • 1 Egg
  • 4 Tablespoons Milk
  • 1/2 Cup Sultanas
  1. Rub Butter into sifted flour with fingers
  2. Mix in sugar and mixed spice
  3. Add sultanas and mix well
  4. Beat egg in a small bowl and add milk
  5. Add egg and milk to dry mixture and mix to a stiff dough
  6. Place small teaspoons on a greased tray
  7. Bake for 10 to 15 mins in a moderate oven

 

Wholemeal Date and Walnut Loaf

Wholemeal Date and Walnut Loaf

Ingredients

  • 250gms Dates (pitted and Chopped)
  • 1 1/2 Cups Water
  • 125gms Butter/Margarine
  • 3/4 Cup Sugar (White or Brown)
  • 1 Egg
  • 1 1/2 Cups Wholemeal Self Raising Flour
  • 1 Cup Plain Flour
  • 1/2 Cup Chopped Walnuts
  1. Simmer dates in water for 3 minutes. Remove from heat, add butter and sugar.
  2. Stir until butter is melted.
  3. When cold add beaten egg, sifted flour and walnuts.
  4. Put mixture in greased and papered loaf tin.
  5. Bake in moderate oven for approximately 1 hour.
